I loved this the first time that I made it. I took a recipe that I found and jazzed it up a little. Healthy, quick and goes great with a grilled cheese, I hope you like it.
Creamy Asparagus Soup
1 lb asparagus trimmed and cut into one inch pieces
1 Yukon potato peeled and diced
dried Thyme, Rosemary and Rubbed Sage
1 qt of chicken or beef stock (both are tasty)
half a large white onion
minced garlic
2 oz prosciutto or pancetta chopped (it is only about three thick slices)
half cup of light sour cream
In a large pot cook your chopped meat and remove for later
Saute your onions and they are getting close to done and your garlic
Add stock to the pot, your spices, asparagus and potato
Bring to a boil, reduce heat and simmer for about 15 minutes or until the potato is about to fall apart and the asparagus is almost overdone.
You can either us an immersion blending stick or pour the whole soup into a blender (carefully) and blend until smooth.
Serve hot with a very small dollop of sour cream and some of the cooked meat.
The first time we had this I served it with Grilled Jalapeno Havarti and it was amazing, Troy actually liked it too. The color is a bit off putting at first, but it mellows once you get the sour cream mixed in. The way the meats are cured you don't really need to add alot of salt, but you may want to serve it with a salt shaker. Another tip is if you are using thicker stalks your soup will be a bit fibrous, you may want to chop them smaller and add them just before the potato starts to boil.
On to the crafty, I got my hair cut very short (before and after photos can be seen on Facebook) so I needed something to keep my hair out of my face while I was knitting, cooking, cleaning and well to be honest everything I do. So yesterday I made a trip to Hobby Lobby and got some supplies, this is what resulted...
The big blue one is a bit big for me, so I put a pin back on it. I also am working on some headbands right now, I am not sure what kind I really need or what I want to do with them so they will be coming in a future post.
My "Tacky 1970's Afghan" is done, I finished weaving in all of the ends Tuesday night. It is snuggly even without washing it but after I wash it I will get a picture up so you can see it in all of it's tackiness!
